Veggie white rice with gizzard-snail sauce

So I woke up this morning wondering what to prepare for the family for breakfast, and I quickly came up with a beautiful idea to make this simple Veggie white rice with gizzard-snail sauce.


Ingredients needed are:
  • Rice
  • Carrot
  • Pumpkin leaves (Ugu)
  • Tomatoes
  • Habanero Pepper (Atarodo)
  • Red bell pepper (tatashe)
  • Onions
  • Garlic
  • Vegetable Oil
  • Snails
  • Gizzards
  • Eggs
  • Seasoning cubes
  • Curry
  • Thyme
  • Coriander Spice
  • Salt
  • Cucumber
Tools needed are:
  • Hand blender
  • Pots 
  • Spoon
  • Serving plate
How to make Veggie White rice with gizzard-snail sauce:


The first thing to do is finely chop your carrot and pumpkin leaves into tiny bits. Also, chop your onions and garlic and also set it aside.

After doing that,  Use a hand blender to blend the tomatoes, pepper, and tatashe together to be set aside too.

The next thing to do is to boil your eggs when ready, drain out hot water and pour room temperature water into a bowl with your eggs, hold on for few minutes before removing the shell.

Clean your snail and wash carefully with water, also wash your gizzard. Spice both with your curry, thyme, coriander, some chopped pepper, chopped onions, seasoning cubes and salt to taste. Turn on your gas cooker and allow your meat to cook till it's done.

Parboil your rice and sieve the water from it, wash carefully again and add water to it, then also add a little groundnut oil, the pumpkin leaves (ugu), carrots and salt to taste, and allow it cook till it's soft and ready to be served. Once your rice is ready.

The next thing to do is to turn on the gas cooker, put a pot on it, add some groundnut oil when its heated add the finely chopped onions and garlic and fry till its a bit brown. Then add the gizzard and snail and fry with the onions a bit, also add the already blended tomatoes and pepper mix and allow it fry for a while, at this point, we can add our spice to it. Then our gizzard-snail stock. 

Be sure you test for salt before adding any to know the actual amount of salt to be added.  The next thing to do is to add our boiled eggs and allow it to simmer some more. Then you can also add your seasoning cube if need be.

Voila, our Veggie white rice and gizzard-snail sauce is ready to go down.

Garnish with some finely sliced cucumber

'Merry Christmas' or 'Lockdown Christmas'

While we are happy to be gradually free from the clutches of the Pandemic. Seems like some will be having a Lockdown Christmas.  If using a nose mask and obeying the directives of curbing the Pandemic is important, I do not understand why some still act like it doesn't matter. It's just a day to Christmas and while we will be going out, that's if your state permits to celebrate, let's don't forget we have to be responsible for our actions.  I feel like I experienced the Christmas celebration at its peak in childhood.
