New year Resolution

 Hello friends, compliment of the season. It's going to be a new year in three days and a lot of us cannot wait especially with a new year resolution. You do not have to wait till it's Jan 1st, 2021 to effect the change you want. You can make it happen now. You need to be intentional about living.  Just like an elastic band, it remains the same way until a force acts on it and it stretches. Be ready to push, except you take that extra step and put in your best you might not see the change you want. You can even document your daily activities to be more accountable. Let's be intentional about creating that atmosphere and environment we so desire to live in. Don't be too hard on yourself if you fail at it sometimes. There is always room for improvement. Don't just do it because you want to, leave your footprints on it. Try out new things, put in your best, and most importantly Do it without Fear. See you at the top. Linda 🤗

'Merry Christmas' or 'Lockdown Christmas'

While we are happy to be gradually free from the clutches of the Pandemic. Seems like some will be having a Lockdown Christmas.  If using a nose mask and obeying the directives of curbing the Pandemic is important, I do not understand why some still act like it doesn't matter. It's just a day to Christmas and while we will be going out, that's if your state permits to celebrate, let's don't forget we have to be responsible for our actions.  I feel like I experienced the Christmas celebration at its peak in childhood. The atmosphere doesn't feel the same. The earth is so polluted with evil and to this day I no longer want to hear the news because of the strange things that are been reported. Try and feed your thoughts with only positive things, things that are soul, body, and spirit-lifting. Don't stop being you and be around the people you care about and who care about you too. Pondering at midnight

 I woke up at midnight pondering on a lot of things, Nigeria most especially. I am so happy for the Americans. They wanted change and they got it, thinking ours is still some years away.  Not 1, not 2, but 3 years. We are strong, there is so much happening. Inflation, rise in poverty, failed education system, poor infrastructure, no security for lives and property, no constant supply of electricity. The list is endless.  The lives of the youth and future leaders are at stake. The academic body of universities (ASUU) has been on strike for months now, the negotiation for a more convenient payment platform has been unending. It's so shameful. Every day in this country is taking a risk. I honestly wish for change now. It's sad to watch this never-ending movie Nigeria.  I also sincerely do not understand why a leader who once failed at his duty to lead is seeking an opportunity to lead again. Maybe I will have some relief,  don't know when or how it will happen but I am hopeful

Life Update, End sars Protest, and ...

Hello friends,  it's been a while here and it feels like I have been off for too long, My apologies.  A lot has happened in Nigeria and the world at large. Firstly the Pandemic and a day Nigerians will never forget, ' October 20th, 2020. #lekkimasaccre  That should be a day set aside to honour those we lost. The brave ones who stood their ground and would never shift fighting for a better Nigeria for those born and unborn. How would I speak of this day without talking about Dj switch. I am in awe of how brave she was. Even in the heat of the shootings and her own life at stake. She wouldn't bend and aired the whole event using her Instagram life. 60th Nigeria Independence, Is it worth Celebrating, Yay or Nay?

 It's a new dawn. Another year of hope.  Another independence. It's Nigeria's 60th independence anniversary. We aren't close to where we want to be. We long for the day we will be there. Free from corruption and a failed system. We cannot pretend everything is fine when it's not. It might be for you but is it for Nigerians? There are issues that needs solutions. We can not continue to suffer and smile. Are we really independent after the independence. It seems like there are 2 kinds of people in this country. The independent and the dependent.The independent "those who are in power" the high and mighty. The dependent " the masses" the vulnerable. Today isn't a day worth celebrating as a country but as an individual celebrate because you are alive after so many hiccups especially killings of innocent lives. You are alive! How to make soft and chewy puff puff

Hello friends, hope you are doing great? Today I will be sharing my puff puff recipe with you.  After about 2 failed puff puff recipe, I finally got it. Making puff-puff of one of the sweetest things. It's a great snack and a little dough when put into oil puffs up. I guess that's where the name came from. There isn't a complete party without small chops and what's small chops without puff puff?  For this recipe you will need: 1 1/2 cup of flour 1/4 cup milk 1 cup of warm water 1 tbsp instant yeast 4 tbsp sugar. Procedure: * Add the flour into a mixing bowl *  the milk, yeast, and sugar into the same mixing bowl. * Mix using a whisk to properly combine all ingredients together. * Add the warm water and mix till it's well combined. * Cover using a cling film and set aside in a warm place till the dough doubles in size. * After about an hour, remove the cling film and mix using a wooden ladle.  * Put a pot on heat and add the vegetable oil. * When hot, scoop the dough

My all time favorite Banana Bread Recipe

Hello friends, It's been a while and a lot has been going on. I have missed being here and I am so happy that you take out time to read my post. I have wanted to share this Recipe with you for a while now, but I am so happy it is finally here . The love for Banana Bread in my house is huge I am sure you would love it too.  For this recipe, you will need: 1 cup flour 1/2 cup brown sugar 4  ripe Bananas 1 large egg 1/3 cup butter 1 tsp baking soda. The first thing to do is to mash the ripe bananas. Next, add butter to a mixing bowl and add 1/2 a cup of brown sugar to it. Mix till you have a smooth fluffy texture.  Add an egg and mix to ensure it combines properly. This can also be mixed by hand. Add milk and mix to combine evenly. I added the flour and baking powder using a sieve to the mixture. Mix to ensure it combines properly, and now the last part is to add the mashed bananas to the mixture and combine using a spatula. How have you all been dealing with the increase in the numbers of cases on a daily basis, scary right!  I saw a post yesterday on Instablog  and decided to put it up here. Delicious Homemade Oat Coconut Banana Pancakes

Hello friends, trust you are good. Thinking about the perfect breakfast idea for the family. The Oat Coconut Banana Pancake is a healthy choice and also very tasty. I recently made this for my family, and they loved it. The recipe for this Oat Coconut Banana Pancake is affordable and easily accessible. The ingredients are: All-purpose flour (1 cup) Finely Blended Oat (1/2 cup) Coconut flour (1/4 cup) Baking powder (1/2 tbs) Sugar (1 tbs) Vegetable oil (1tbs) Eggs (2 eggs) Vanilla essence (1tsp) 4 ripe bananas A glass of milk  How is the Oat Coconut Banana Pancake made? Get a sieve and a bowl, add a cup of the all-purpose flour into the sieve, ensure it sifts through. This will ensure it evenly combines with other ingredients. How to make Dalgona coffee

The Dalgona coffee originated from South Korea and India and it became a trend as a result of stay at home directives to curb the spread of Covid-19. I eventually decided to give it a try and I loved it. If you are a coffee lover, then there is no doubt you would love this too. It's easy to make and  taste so good. Ingredients needed for this are: Sugar Hot Water Black Coffee (Nescafe) A cup of warm/ cold milk Tools needed are: A whisk A measuring spoon A bowl The Dalgona coffee is made by adding an equal proportion of sugar, water and black coffee. Using a proportion of 4 tablespoon (tbs), I added 4 tbs of Sugar : 4 tbs of Hot water: 4 tbs of black coffee into a bowl. The next to do is to whisk. Using your whisk you mix all 3 ingredients till you get a fluffy thick mixture. Once this is achieved, you get a glass of cold/warm milk and using a spoon scoop out some of your coffee into the cup, and that it is. Enjoy your Dalgona coffee. It happened years ago. It was the most scary experience ever. Don't ever think God isn't present, He always is and there is no one who would understand you better than HE does, remember He is the omnipresent. I was just a young girl and seeking admission to the university, actually the university of Ibadan was my choice at the time. But I was offered another course instead. It wasn't one of my best days. I got to meet people that were suppose to be course mates, but thought of not being offered your choice course and having to wait an extra year wasn't the best feeling. So I woke up this morning wondering what to prepare for the family for breakfast, and I quickly came up with a beautiful idea to make this simple Veggie white rice with gizzard-snail sauce. Covid 19: Staying productive amidst it all

Hello beautiful people, just as I stated in my previous post there isn't any need to panic. All we need do is adhere to the safe measures in preventing the virus, which was stated in my previous post. If you are yet to see it please do. I know some organisations have resulted to working from home to contain the spread of the corona virus. Here's how we can still be productive amidst it all Its important you acknowledge God by saying your prayers once you are up. I know sometimes we can get too clingy to our phones but if you must be productive you can't sideline God you must consciously and genuinely include him in your plans. We all know that going to the gym is a no-no, right! But that shouldn't ruin your fitness plan. You can still exercise at home and burn some calories. Recently I started using this
