Updated Nigerian fried rice recipe

The Nigerian fried rice recipe is a staple for most parties and it just makes you want to keep eating rice.

With this recipe I ma about to share, be sure your fried rice won't the same way again. You will feel the crunchy veggies when eating this meal.

Ingredients are:

  • Rice
  • vegetable oil
  • Onions
  • Spring onions
  • Green pepper
  • Pepper
  • Carrot
  • Sweet corn
  • Green peas
  • Green beans
  • Sausage/liver ( this depends on which is available)
  • Chicken stock
  • Curry
  • Thyme
  • Seasoning cubes
Preparation:

Wash and Parboil the rice just for few minutes.  Drain the rice and add your chicken stock to the rice, spice your rice with your curry and thyme. The curry should be enough to bring out that color in your rice. Add salt, some seasoning cubes and water enough to cook rice.

Allow Rice to cook till it's soft enough to eat. Keep aside.
Wash and neatly chop your vegetables and keep aside too. Wash and boil your liver till it is well cooked. 

Put your fry pan or none stick pan on the heat, add just a little vegetable oil, allow to heat up, then add some onions, add some already sliced sausages ( rinse before use) to fry, then add in the already chopped  vegetables one at a time , add some curry powder, thyme, some ginger and garlic seasoning , some salt and seasoning cubes. 

Allow it to fry till it's just perfect. Remember we want our vegetables crunchy.

When it is ready, take a portion of the fried rice and the veggies and mix in properly, till you have successfully mixed all together.

 Hi Friends, This has been long overdue but I think I am in a good place to begin this series. Travelling has never been something on my list.
